Why are individual chromosomes more difficult to see during interphase than during mitosis?

During mitosis, the chromosomes are coiled and supercoiled and superdupercoiled and condensed so they can be dragged around without breaking. During interphase, they're not nearly so coiled or so condensed -- they're present as chromatin, so that RNA polymerase can get to the genes that need transcribing.
